Reference: South Beach Diet
Prep Time: 30 minutes (chill time)
Cook Time: 8-10 minutes
Serves: 4

2 tablespoon lemon juice
1 1/2 teaspoons grated fresh ginger or bottled ground ginger
1 teaspoon grated garlic powder or two or three cloves grated garlic
2 tablespoons olive oil
4 boneless, skinless chicken breasts
Salt and pepper to taste
Splash of cooking oil of your choice (olive, vegetable, coconut etc.)

1. Combine the first four ingredients in a cup. Place the chicken breasts in a deep bowl and pour the mixture over the chicken. If you prefer more marinade, you may double the amount of these four ingredients before pouring them over the chicken.
2. Refrigerate covered for at least 30 minutes to marinate.
3. Add cooking oil of your choice to a skillet and heat on medium high until sizzling.
4. Add the chicken and cook for 5 minutes on each side until done or 8-10 minutes total. It should be white inside, not pink, when cut with a knife!
