Fake Mashed Potatoes

This recipe puts a healthy twist on a classic comfort food. It’s as easy to make and tastes just as good with a bit of butter as its potato counterpart does. Plus, you can make your fake mashed potatoes a rainbow of colors by using different colored cauliflower.

Prep Time: 5 minutes
Cook Time: 5-10 minutes
Serves: 1


4 cups cauliflower florets (fresh or frozen)
1 tablespoon olive oil
Salt and pepper to taste
Butter (or your choice of sauce) to taste


1. Cook the cauliflower florets in a pot of gently boiling water for 5-10 minutes or until soft.
2. Process the cauliflower in a food processor or in a blender with the olive oil until the mixture is smooth.
3. Top with the butter or your choice of yogurt, sour cream, or other sauce.
